Why This Salad Is Amazing for Your Skin

Every single ingredient in this salad was chosen with your skin in mind, but we promise it also happens to taste incredible. Here's the skin science behind your plate:

       Strawberries: Vitamin C (hello, collagen production!), natural AHAs for gentle cell turnover, and ellagic acid to fight free radicals and protect against UV damage.

The Full Recipe

For the Salad (serves 2):

       2 cups fresh baby spinach, washed and dried

       1 cup fresh strawberries, hulled and sliced

       ¼ cup crumbled goat cheese or feta

       ¼ cup candied pecans or walnuts (store-bought or homemade)

       ¼ small red onion, very thinly sliced

       Fresh mint leaves for garnish (don't skip this as it makes a difference!)

For the Honey Lemon Dressing:

       3 tablespoons good quality olive oil

       1½ tablespoons fresh lemon juice (about half a lemon)

       1 tablespoon raw honey

       1 teaspoon Dijon mustard

       Salt and freshly cracked black pepper to taste

 

How to Make It

Make the dressing:

1.       Combine the olive oil, lemon juice, honey, and Dijon mustard in a small jar or bowl.

2.       Whisk vigorously (or shake the jar) until the dressing comes together and is fully emulsified. It should look creamy and slightly thick.

3.       Season with salt and pepper, taste, and adjust. Want it tangier? More lemon. Sweeter? A little more honey. It's very forgiving.

Assemble the salad:

4.       Arrange your baby spinach as the base on a large plate or in a wide bowl. Don't pile it instead spread it out so every bite gets good coverage.

5.       Scatter the sliced strawberries evenly across the spinach.

6.       Add the red onion slices, crumbled cheese, and nuts.

7.       Drizzle the dressing over the top just before serving.  Don't dress it too far in advance or the spinach will wilt.

8.       Finish with a few fresh mint leaves and serve immediately.

Tip: If you're making this for meal prep, store the dressing separately and add it right before eating. The salad components (minus the dressing) will keep nicely in the fridge for up to a day.

 

Ways to Make It Your Own

       Add grilled chicken or salmon for extra protein and those skin-loving omega-3s.

       Swap the nuts for pumpkin seeds (pepitas).  They're rich in zinc, which is fantastic for skin clarity.
